A varied Indian plate with light cooking and midday sun covers nearly every vitamin - B12 needs dairy, eggs or supplements.
Food is the foundation: almost every vitamin except D is best obtained from a varied diet, and even D benefits from dietary support when sunlight falls short.
Vitamin by vitamin, the Indian plate:
Practical rules: eat at least four to five food groups daily; include one raw serving of vitamin-C food; do not rely on polished white rice or maida as the staple; cook vegetables lightly; vegetarians must plan B12; and remember tea/coffee with meals reduces mineral absorption.
Ayurvedic view (interpretive): classical dietetics - varied seasonal food, all six tastes, milk and ghee, fresh preparation - aligns well with these principles within an interpretive framework whose evidence is limited. It complements, never replaces, the specific vitamin targets above.
Remember: colour and variety on the plate, light cooking, midday sun for D, dairy and eggs (or supplements) for B12, leafy greens and dals for folate, fresh amla/guava/citrus for C. Food first; supplements for confirmed gaps.
