From incubation to recovery: the usual course, why dehydration matters, and atypical signs.
Food poisoning usually follows a short, predictable course. The timing differs by germ.
Stage 1: Exposure and incubation
You eat contaminated food or water. There are no symptoms yet. This phase lasts from about an hour for toxins to several days for some infections.
Stage 2: Onset
Nausea, stomach cramps and loss of appetite begin, followed by vomiting, diarrhoea or both. Some people get a fever and body aches.
Stage 3: Acute phase
Symptoms are at their worst, usually for 12 to 48 hours. Dehydration is the main danger in this stage, especially in children, older adults and pregnant women. Frequent small sips of oral rehydration solution (ORS) are important.
Stage 4: Recovery
Vomiting stops first, then diarrhoea eases. Appetite returns slowly. Most people feel better within one to three days, though tiredness can last longer.
Stage 5: Return to normal eating
Bland, light meals can be restarted as soon as you feel hungry. Bowel habits may take a week or two to settle completely.
When the course is not typical
These need medical care the same day.
After recovery
Some people have lactose intolerance or irritable-bowel-like symptoms for weeks. Some germs, such as Salmonella, can be passed on in stool for longer, so keep up careful hand washing.
Ayurvedic framing
Ayurveda describes stages of dosha imbalance and ama formation. This is an interpretive framework and does not change the need to replace fluids.
